Nizam, shortened from Nizam-ul-Mulk, meaning Administrator of the Realm, the title of the sovereigns of Hyderabad State were the rulers of the Hyderabad state. While the erstwhile Hyderabad was famous for the mosques, pearls and craftsmanship, the mouthwatering royal secrets from the kitchens of the Nizam has come out as a foodie’s holy grail- The Hyderabad Biryani.
The Biryani at Nizam’s House is a perfect concoction of basmati rice, herbs, meat, curd, onions, spices, lemon, and saffron. Coriander leaves cooked to perfection in our kitchen keeping the true spirit and flavor of Hyderabad.
The Dum Biryani is prepared with kachchegosht (raw meat) marinated with spices overnight and then soaked in dahi before cooking. The meat is sandwiched between layers of fragrant basmati rice and cooked "in dum" after sealing the handi.
There is also a vegetarian version of the biryani which is made using seasonal vegetables such as carrots, peas, cauliflower, potatoes.
